Crispy & Chewy chocolate chunk cookies

These crunchy on the outside and gooey on the inside cookies will have your house smelling like a cookie shop. Your friends and family wondering if you’ve really made them yourself.

They’re so quick and easy to make and come together in about 10 minutes and will be ready to eat in about 30 minutes. 


Chocolate

Using good quality chocolate will elevate your cookies and preferably a chopped up bar into chunks instead of chocolate chips. You can use a mix of dark, milk or white chocolate or something more novelty. 

Sugar

These cookies aren’t super sweet. I used a mix of unrefined caster sugar and brown sugar. If you like it sweeter you can add 30-40g more sugar. Equally you can also use all brown sugar or coconut sugar.

You want to take these out when they start browning on the edges, cooking time will depend on your oven and crispy you like them, I normally leave them in for 12-13 minutes.

Crispy Chewy Cookies

Ingredients

  • 140 melted butter 

  • 110g brown sugar (I use unrefined)

  • 50g granulated sugar (I use unrefined) 

  • 1 or 2 tsp vanilla 

  • 1 x egg

  • 200g flour plain

  • 1 x tsp baking powder

  • 1/2 x tsp bicarbonate

  • 200g chocolate chopped any chocolate you like

instructions

Preheat oven to 180C.

Melt the butter and mix in the sugar and vanilla, then mix in the egg, add the flour and baking powder and mix well, add in the chocolate chunks you’ve chopped and mix until a cookie dough is formed. Make little balls from the dough about plum size and do 6 per sheet spaced out well as they will expand out and bake for 12-13 min. If you put both trays in at the same time increase your oven to 190C.
